Easy Chocolate Buttercream
The only thing easier than making this buttercream is grabbing a can of frosting, but making it from scratch gives you total control over the sweetness, ingredients, and texture.
For me, that control is key. I like to cut back on sugar where I can. In this batch, I used half sugar-free powdered sweetener and half regular powdered sugar, and it worked beautifully. I also love adjusting the texture depending on the need. Sometimes I want a looser consistency for frosting a sheet cake, and other times I prefer a stiffer buttercream for piping decorations or cupcake swirls.

- Butter: I use regular salted butter. If you are using unsalted, add a small pinch of salt to balance the sweetness.
- Cocoa: I use Hershey’s Cocoa, but any brand will work. Use your favorite, as long as it’s unsweetened.
- Powdered Sugar: Pure powdered cane sugar is perfect. You can adjust up or down a little to control the level of sweetness. You can swap in some sugar-free powdered sweetener if you like. I would start by swapping just half of it.
- Milk or cream: Milk or cream is used to thin the frosting to your desired consistency.
- Vanilla: Pure vanilla extract works perfectly; no need for the fancy vanilla paste here. Of course, if you want to use vanilla paste, don’t let me stop you! If so, I would start with one teaspoon, mix that in and taste before adding more.
- Espresso powder or instant coffee: Optional, but highly recommended. I used espresso powder but if you don’t keep that on hand, instant coffee would work as well.

- Add Sugar and Cocoa – Gradually add the sugar/cocoa mixture, mixing on low speed each time to incorporate.
- Add Vanilla and Milk – Add the vanilla and milk or cream (including the tablespoon used for dissolving espresso powder, if applicable).
- Mix – Beat on medium speed until the frosting is smooth, light, and fluffy, about 1 minute. Add more milk or cream as needed to reach your desired consistency.

How can I soften butter quickly?
Ideally, take the butter out 2-3 hours before using. If you’re short on time, cut the butter into small cubes and microwave in 5-10 second bursts until just softened but be very careful not to melt it!
Can I make this less sweet?
To reduce sweetness, you can use slightly less powdered sugar and reduce the liquid to maintain the right consistency. You can also swap up to half of the powdered sugar with a powdered sugar-free sweetener.
How can I adjust the consistency?
